Instructions
• Preheat the air fryer to 200°C (390°F).
• Lightly spray the potato fries with cooking spray.
• Air fry for 20–25 minutes, shaking halfway through, until golden and crispy.
• Meanwhile, heat a large nonstick pan over medium heat.
• Cook the onion, garlic, and red peppers for 5 minutes until softened.
• Add the mushrooms and cook for another 2 minutes.
• Add the lean beef mince and cook until browned, breaking it into small pieces.
• Stir in the passata, chopped tomatoes, balsamic vinegar, beef stock cube, Italian seasoning, paprika, oregano, salt, and pepper.
• Simmer gently for about 30 minutes until the sauce has thickened.
• Divide the crispy fries between serving plates.
• Spoon the Bolognese generously over the fries.
• Sprinkle each serving with grated mature cheddar.
• Serve immediately while hot.
