Instructions

• Preheat oven to 180°C (350°F).
• Lightly coat a nonstick frying pan with cooking spray.
• Add the bacon, garlic, and mushrooms.
• Cook for about 10 minutes until lightly browned.
• Lightly grease an 8-inch (20 cm) flan dish or cake tin with cooking spray.
• Spread the cooked bacon and mushroom mixture evenly in the prepared dish.
• In a large bowl, whisk together the eggs, skimmed milk, salt, and black pepper.
• Stir in the grated cheddar cheese.
• Pour the egg mixture evenly over the bacon and mushrooms.
• Arrange the halved cherry tomatoes on top.
• Bake for 35–40 minutes until the quiche is golden and set in the center.
• Let cool for 5 minutes before slicing and serving.
