Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large pan, cook the diced bacon or pancetta over medium heat until crispy. Add the minced garlic and sauté for another minute.
  4. In a bowl, whisk together the eggs, heavy cream, and Parmesan cheese. Season with salt and pepper.
  5. Add the cooked pasta to the pan with bacon and garlic. Pour in the egg mixture and stir thoroughly to coat the pasta.
  6. Transfer the pasta mixture into a baking dish. Top with shredded mozzarella cheese.
  7. Bake in the preheated oven for 25–30 minutes, or until the top is golden and bubbly.
  8. Garnish with chopped parsley if desired, and serve hot.

Chef’s Tips

  • Use freshly grated Parmesan for the best flavor and melting quality.
  • If you’re short on time, use pre-cooked bacon pieces available in stores.
  • For a lighter version, substitute half-and-half or milk for the heavy cream.
