• Preheat oven to 180°C (350°F) and line a loaf pan with parchment paper.
• In a bowl, mix sugar and lemon zest until fragrant.
• Add eggs and whisk until smooth and slightly frothy.
• Stir in yogurt and vanilla extract.
• In another bowl, combine flour, baking powder, and xanthan gum.
• Gradually mix dry ingredients into the wet mixture.
• Add melted butter and mix until smooth.
• Fold in blueberries gently.
• Pour batter into the prepared pan and spread evenly.
• Bake for 45–50 minutes until golden and a toothpick comes out clean.
• Let cool completely before removing from pan.

• For the glaze, mix powdered sugar, lemon juice, and butter until smooth.
• Drizzle over the cooled bread before serving.
