Gluten-Free Cinnamon Rolls

Instructions

• In a small bowl, mix psyllium husk with warm water and let it form a gel.
• In a large bowl, combine tapioca starch, millet flour, sorghum flour, sugar, yeast, baking powder, xanthan gum, and salt.
• Add the psyllium gel, warm milk, egg, and melted butter to the dry ingredients.
• Mix and knead until a smooth, slightly sticky dough forms.
• Roll the dough into a rectangle on a floured surface.
• Spread butter over the dough, then sprinkle with brown sugar and cinnamon.
• Roll the dough tightly into a log and slice into rolls.
• Place rolls in a greased baking dish and let them rise for about 1 hour.
• Preheat oven to 180°C (350°F).
• Bake for 25–30 minutes until golden brown.
• Meanwhile, mix cream cheese, butter, powdered sugar, vanilla, and salt to make frosting.
• Spread frosting over warm rolls and serve.
