Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, diced onion, minced garlic, milk, egg, salt, pepper, and thyme. Mix until well combined.
  3. Transfer the meat mixture to a loaf pan and shape it into a loaf. Pat it down to ensure even cooking.
  4. Bake the meatloaf in the preheated oven for 45 minutes.
  5. While the meatloaf is baking, prepare your mashed potatoes if you haven’t done so already.
  6. After 45 minutes, remove the meatloaf from the oven. Spread the mashed potatoes evenly over the top of the meatloaf.
  7. Sprinkle the shredded cheddar cheese on top of the mashed potatoes and then dot with butter.
  8. Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  9. Allow the meatloaf to rest for 10 minutes before slicing to serve. Enjoy!
