Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground beef, breadcrumbs, diced onion, minced garlic, milk, egg, salt, pepper, and thyme. Mix until well combined.
- Transfer the meat mixture to a loaf pan and shape it into a loaf. Pat it down to ensure even cooking.
- Bake the meatloaf in the preheated oven for 45 minutes.
- While the meatloaf is baking, prepare your mashed potatoes if you haven’t done so already.
- After 45 minutes, remove the meatloaf from the oven. Spread the mashed potatoes evenly over the top of the meatloaf.
- Sprinkle the shredded cheddar cheese on top of the mashed potatoes and then dot with butter.
- Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Allow the meatloaf to rest for 10 minutes before slicing to serve. Enjoy!

- For extra flavor, consider adding some Worcestershire sauce to the meat mixture.
- Use leftover mashed potatoes to save time on preparation.
- Feel free to customize the cheese; mozzarella or a blend works wonderfully too.
