- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine diced pumpkin, sweet potato, and grated carrots. Drizzle with olive oil and season with salt, pepper, and cinnamon. Toss well to coat.
- Transfer the vegetable mixture into a greased baking dish, spreading it out evenly.
- In a separate bowl, mix the crumbled feta cheese and sliced almonds. Sprinkle this mixture over the vegetables in the baking dish.
- Bake in the preheated oven for 30-35 minutes, or until the vegetables are tender and the topping is golden brown.
- While the bake is cooking, prepare the maple cranberry drizzle by combining maple syrup and dried cranberries in a small saucepan. Heat on low until the cranberries soften, about 5 minutes.
- Once the bake is done, remove it from the oven and let it cool for a few minutes. Drizzle the maple cranberry mixture over the top just before serving.
- Garnish with fresh rosemary for an aromatic finish.
