Instructions
• Blend the rolled oats into a fine flour using a food processor or blender.
• Transfer the oat flour to a mixing bowl.
• Add the baking powder and salt, then stir to combine.
• Add the Greek yogurt and egg.
• Mix until a smooth batter forms.
• Let the mixture rest for 30 minutes to allow the oats to absorb the moisture.
• Meanwhile, prepare the pizza sauce.
• Lightly spray a saucepan with cooking spray and cook the onion until softened.
• Add the garlic and cook for 1–2 minutes.
• Stir in the passata, water, tomato paste, maple syrup, oregano, basil, onion powder, garlic powder, salt, and black pepper.
• Bring to a gentle boil, then reduce the heat and simmer for about 40 minutes until thickened.
• Preheat the oven to 200°C (400°F).
• Line a baking tray with parchment paper and lightly spray with cooking spray.
• Spoon the dough onto the parchment paper.
• Cover with another sheet of parchment paper and gently roll into a 9-inch round.
• Remove the top parchment paper carefully.
• Bake the crust for 15–20 minutes until lightly golden and firm.
• Spread the prepared pizza sauce over the crust.
• Top with mozzarella cheese and fresh parsley or basil.
• Return to the oven and bake for another 10 minutes until the cheese is melted and bubbly.
• Slice and serve immediately.
