Instructions
• Lightly coat a deep saucepan with cooking spray and place over medium heat.
• Add the chopped onion and cook for about 5 minutes until softened.
• Add the crushed garlic and cook for another 2 minutes.
• Stir in the carrot, grape tomatoes, crushed tomatoes, tomato paste, stock, Italian herbs, and sweetener.
• Bring the mixture to a boil, then reduce the heat.
• Simmer gently for 40 minutes until the vegetables are tender and the flavors have developed.
• Blend the cottage cheese separately until completely smooth.
• Carefully blend the cooked soup until silky and lump-free.
• Add the smooth cottage cheese gradually, blending or pulsing after each addition until fully incorporated.
• Season with salt and black pepper as needed.
• Garnish with fresh parsley and serve warm.
