Instructions
- In a bowl, crumble the Weetabix biscuits and pour in the milk. Let them soak for about 5 minutes until softened.
- In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Mix well.
- Once the Weetabix is soft, add the brown sugar, vegetable oil, and vanilla extract to it. Mix until well combined.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Fold in the raisins gently into the batter.
- Preheat your air fryer to 320°F (160°C).
- Pour the batter into a greased cake pan that fits your air fryer basket.
- Place the pan in the air fryer basket and cook for 25 minutes or until a toothpick inserted into the center comes out clean.
- Once cooked, remove the pan from the air fryer carefully and let it cool for a few minutes before slicing.
Chef’s Tips
- Feel free to add nuts or other dried fruits for added texture and flavor.
- For a lighter cake, you can substitute half of the all-purpose flour with whole wheat flour.
- Serve with a spread of butter or a drizzle of honey for extra indulgence!
