- Preheat your oven to 200°C (400°F).
- In a large pan, sauté the onion and garlic until soft.
- Add the minced beef to the pan and cook until browned.
- Stir in the grated carrot and chopped celery; cook for an additional 5 minutes.
- Add tomato paste, Worcestershire sauce, thyme, salt, and pepper; mix well.
- Remove from heat and let the beef mixture cool slightly.
- Roll out the puff pastry on a floured surface and cut into circles for the base and tops of the pies.
- Line a muffin tin with the larger pastry circles, filling each with the beef mixture.
- Top each pie with a smaller pastry circle, sealing the edges well.
- Brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until golden and puffed.
- Let them cool slightly before serving.
