Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large pan, sauté the onion and garlic until soft.
  3. Add the minced beef to the pan and cook until browned.
  4. Stir in the grated carrot and chopped celery; cook for an additional 5 minutes.
  5. Add tomato paste, Worcestershire sauce, thyme, salt, and pepper; mix well.
  6. Remove from heat and let the beef mixture cool slightly.
  7. Roll out the puff pastry on a floured surface and cut into circles for the base and tops of the pies.
  8. Line a muffin tin with the larger pastry circles, filling each with the beef mixture.
  9. Top each pie with a smaller pastry circle, sealing the edges well.
  10. Brush the tops with beaten egg for a golden finish.
  11. Bake in the preheated oven for 25-30 minutes or until golden and puffed.
  12. Let them cool slightly before serving.
