Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine broccoli, cheddar cheese, cream cheese, garlic powder, salt, and pepper. Mix well.
- Pound each chicken breast to about 1/4 inch thickness between two pieces of parchment paper or plastic wrap.
- Spread the broccoli-cheese mixture evenly onto each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks.
- Place the roll-ups in a baking dish and drizzle with olive oil. Sprinkle with a little additional salt and pepper.
- Bake for 25 minutes or until the chicken is cooked through and the tops are golden brown.
- Remove the toothpicks and let cool slightly before serving.
- Garnish with fresh parsley if desired and serve warm.
