Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped spinach and sauté until wilted. Remove from heat and let cool.
  3. In a bowl, combine the sautéed spinach, cottage cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well to form the stuffing.
  4. Cut a pocket in each chicken breast without cutting all the way through. Stuff each pocket with an equal amount of the spinach mixture.
  5. Season the outside of the chicken breasts with paprika, salt, and pepper.
  6. In an ovenproof skillet, heat the remaining olive oil over medium heat. Sear the chicken breasts on both sides until golden brown, about 4 minutes per side.
  7. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving. Enjoy!
