Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped spinach and sauté until wilted. Remove from heat and let cool.
- In a bowl, combine the sautéed spinach, cottage cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well to form the stuffing.
- Cut a pocket in each chicken breast without cutting all the way through. Stuff each pocket with an equal amount of the spinach mixture.
- Season the outside of the chicken breasts with paprika, salt, and pepper.
- In an ovenproof skillet, heat the remaining olive oil over medium heat. Sear the chicken breasts on both sides until golden brown, about 4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving. Enjoy!
