Step 1: Prepare the Crust
- Preheat oven to 375°F (190°C).
- In a bowl, mix gluten-free flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time until dough comes together. Form into a ball, wrap, and refrigerate for 30 minutes.
- Roll out the dough between parchment paper and transfer to a 9-inch pie dish. Trim edges and flute as desired.
Step 2: Make the Apple Filling
- In a large bowl, toss apple slices with sugar, gluten-free flour, cinnamon, nutmeg, lemon juice, and vanilla until well coated.
- Spoon the apple mixture evenly into the prepared crust.
Step 3: Make the Crumb Topping
- In a separate bowl, combine gluten-free flour, brown sugar, and salt. Pour in melted butter and stir until crumbly.
- Sprinkle the crumb mixture evenly over the apples.
Step 4: Bake the Pie
- Bake for 45–50 minutes, or until the topping is golden brown and the apple filling is bubbling.
- Cover the edges with foil if they brown too quickly.
- Cool for at least 1 hour before slicing to allow the filling to set.
