Gluten-Free Quiche

Instructions

Step 1: Prepare the Gluten-Free Crust
  1. In a bowl, whisk together gluten-free flour and salt. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, mixing just until the dough holds together.
  3. Form into a ball, wrap in plastic wrap, and chill for 30 minutes.
  4. Roll out the dough on a lightly floured surface and fit it into a 9-inch pie dish. Trim and crimp edges as desired.
  5. Pre-bake at 375°F (190°C) for 10 minutes to prevent sogginess.
Step 2: Make the Quiche Filling
  1. In a large bowl, whisk together eggs, milk, and cream until smooth.
  2. Add cheese, cooked bacon (if using), vegetables, onions, salt, and pepper. Stir until combined.
Step 3: Assemble and Bake
  1. Pour the filling mixture into the pre-baked crust. Sprinkle a bit of extra cheese on top if desired.
  2. Bake at 375°F (190°C) for 35–40 minutes, or until the center is set and the top is golden.
  3. Let cool for 5–10 minutes before slicing.
