Special Italian Cream Puffs with Custard Filling

Instructions

Step 1: Preheat the Oven
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Bake the Puff Pastry
  1. Using a round cutter, slice thawed puff pastry into circles.
  2. Arrange on the baking sheet and prick each with a fork to prevent over-puffing.
  3. Bake 15–18 minutes until golden and crisp. Let cool completely.
Step 3: Make the Custard
  1. In a saucepan, whisk milk, sugar, cornstarch, and salt. Cook over medium heat, stirring until thickened.
  2. In a bowl, whisk egg yolks. Gradually whisk in a little of the hot milk to temper the yolks.
  3. Return yolk mixture to saucepan, cooking on low until smooth and thickened (about 5 minutes).
  4. Remove from heat and stir in vanilla and butter. Transfer to a bowl, cover with plastic wrap touching the surface, and chill for 30 minutes.
Step 4: Assemble
  1. Slice pastry circles in half horizontally.
  2. Pipe or spoon custard onto the bottom half, then cover with the top half.
Step 5: Serve
  1. Dust with powdered sugar.
  2. Serve immediately or chill briefly for a refreshing treat.
