Air Fryer Pineapple Upside Sugar Cookies

Instructions

Step 1: Make the Dough
  1. Cream together butter and sugar until light and fluffy (2–3 minutes).
  2. Beat in the egg and vanilla extract until combined.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients.
  4. Chill the dough in the fridge for 30 minutes for easier handling.
Step 2: Assemble Cookies
  1. Roll the dough into 12 balls, then flatten each into a disk about the size of your pineapple slices.
  2. Top each disk with a dry pineapple ring. Sprinkle a bit of brown sugar (and cinnamon if desired) on top of the pineapple.
Step 3: Air Fry
  1. Preheat air fryer to 160°C (320°F). Line the basket with parchment paper.
  2. Place cookies in batches (3–4 at a time) into the basket.
  3. Air fry for 6–8 minutes or until edges are lightly golden and pineapple is caramelized.
  4. Let cool slightly before serving. They’ll firm up as they rest.
