Step 1: Make the Dough
- Cream together butter and sugar until light and fluffy (2–3 minutes).
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients.
- Chill the dough in the fridge for 30 minutes for easier handling.
Step 2: Assemble Cookies
- Roll the dough into 12 balls, then flatten each into a disk about the size of your pineapple slices.
- Top each disk with a dry pineapple ring. Sprinkle a bit of brown sugar (and cinnamon if desired) on top of the pineapple.
Step 3: Air Fry
- Preheat air fryer to 160°C (320°F). Line the basket with parchment paper.
- Place cookies in batches (3–4 at a time) into the basket.
- Air fry for 6–8 minutes or until edges are lightly golden and pineapple is caramelized.
- Let cool slightly before serving. They’ll firm up as they rest.
