For the Sugar Cookie Dough

• 1 cup unsalted butter, softened
• 1 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract

For the Pineapple Topping

• 12 small pineapple rings (fresh or canned, patted dry)
• 2 tablespoons brown sugar
