Step 1: Make the Cheesecake Filling
- In a bowl, beat together the cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
- Spoon small dollops (about 2 tsp each) onto a lined tray and freeze for 30 minutes until firm.
Step 2: Assemble the Cookies
- Flatten 1 tablespoon of cookie dough in your hand. Place a frozen cheesecake dollop in the center.
- Top with another tablespoon of cookie dough and seal the edges to enclose the filling.
- Flatten slightly and place on a parchment-lined tray. Chill again if dough becomes too soft.
Step 3: Air Fry
- Preheat air fryer to 160°C (320°F).
- Line the basket with parchment paper and place 2–3 cookies with space between.
- Air fry for 6–8 minutes until golden and set. Let cool for 5–10 minutes before handling.
Step 4: Serve
- Serve slightly warm for a gooey center, or refrigerate for a chilled cheesecake bite!
