Air Fryer Cheesecake Stuffed Chocolate Chip Cookies

Step 1: Make the Cheesecake Filling
  1. In a bowl, beat together the cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
  2. Spoon small dollops (about 2 tsp each) onto a lined tray and freeze for 30 minutes until firm.
Step 2: Assemble the Cookies
  1. Flatten 1 tablespoon of cookie dough in your hand. Place a frozen cheesecake dollop in the center.
  2. Top with another tablespoon of cookie dough and seal the edges to enclose the filling.
  3. Flatten slightly and place on a parchment-lined tray. Chill again if dough becomes too soft.
Step 3: Air Fry
  1. Preheat air fryer to 160°C (320°F).
  2. Line the basket with parchment paper and place 2–3 cookies with space between.
  3. Air fry for 6–8 minutes until golden and set. Let cool for 5–10 minutes before handling.
Step 4: Serve
  1. Serve slightly warm for a gooey center, or refrigerate for a chilled cheesecake bite!
