Instructions
Step 1: Sauté the Base
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté for 2–3 minutes until fragrant.
- Stir in the bell pepper and cook for another 3–4 minutes until softened.
Step 2: Cook the Chicken
- Add the diced chicken to the pot and cook until browned, about 5 minutes.
Step 3: Add the Veggies & Simmer
- Add corn, diced tomatoes, black beans, chicken broth, water, and all the seasonings.
- Bring to a simmer and cook for 10–15 minutes until chicken is fully cooked and flavors meld.
Step 4: Final Touches
- Stir in lime juice and top with chopped cilantro before serving.
