Instructions

Step 1: Sauté the Base
  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté for 2–3 minutes until fragrant.
  3. Stir in the bell pepper and cook for another 3–4 minutes until softened.
Step 2: Cook the Chicken
  1. Add the diced chicken to the pot and cook until browned, about 5 minutes.
Step 3: Add the Veggies & Simmer
  1. Add corn, diced tomatoes, black beans, chicken broth, water, and all the seasonings.
  2. Bring to a simmer and cook for 10–15 minutes until chicken is fully cooked and flavors meld.
Step 4: Final Touches
  1. Stir in lime juice and top with chopped cilantro before serving.
