Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 cup corn kernels (fresh, frozen, or canned, drained)
  • 1 can (15 oz) diced tomatoes (with or without green chilies)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 cup water
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1 cup fresh cilantro, chopped (optional, for garnish)
  • Juice of 1 lime (optional, for added brightness)
