Air Fryer Jaffa Cakes

Instructions

Step 1: Prepare the Sponge
  1. Preheat your air fryer to 160°C (320°F).
  2. Whisk eggs and sugar until pale and fluffy.
  3. Gently fold in flour and vanilla extract.
  4. Divide mixture into a greased silicone muffin tray.
  5. Air fry for 6–8 minutes until golden.
  6. Let cool completely.
Step 2: Make the Orange Jelly
  1. Heat orange juice and marmalade in a pan.
  2. Sprinkle gelatin over and stir until dissolved.
  3. Pour into a shallow tray and refrigerate until set.
  4. Cut into small discs matching the sponge size.
Step 3: Assemble the Jaffa Cakes
  1. Place a jelly disc on each sponge.
  2. Melt dark chocolate and spoon over the top.
  3. Allow to set before serving.
