Instructions
Step 1: Prepare the Sponge
- Preheat your air fryer to 160°C (320°F).
- Whisk eggs and sugar until pale and fluffy.
- Gently fold in flour and vanilla extract.
- Divide mixture into a greased silicone muffin tray.
- Air fry for 6–8 minutes until golden.
- Let cool completely.
Step 2: Make the Orange Jelly
- Heat orange juice and marmalade in a pan.
- Sprinkle gelatin over and stir until dissolved.
- Pour into a shallow tray and refrigerate until set.
- Cut into small discs matching the sponge size.
Step 3: Assemble the Jaffa Cakes
- Place a jelly disc on each sponge.
- Melt dark chocolate and spoon over the top.
- Allow to set before serving.
