Step 1: Prepare the Chicken
  1. In a bowl, toss diced chicken with olive oil, curry powder, turmeric, ginger powder, salt, and pepper.
  2. Preheat your air fryer to 375°F (190°C).
Step 2: Cook the Chicken
  1. Place the seasoned chicken in the air fryer basket in a single layer.
  2. Air fry for 10–12 minutes, shaking the basket halfway through, until golden and fully cooked.
Step 3: Make the Sauce
  1. In a saucepan, sauté onion, bell pepper, and garlic over medium heat for 3 minutes.
  2. Add chicken broth and soy sauce, then bring to a simmer.
  3. For a thicker sauce, mix cornstarch with 1 tbsp water and stir it in.
Step 4: Combine & Serve
  1. Add the cooked chicken to the sauce and stir to coat.
  2. Simmer for 2 minutes, then serve hot over rice or noodles.
