Step 1: Air Fry the Cauliflower
- Preheat your air fryer to 375°F (190°C).
- Toss cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper.
- Place in the air fryer basket in a single layer.
- Air fry for 12–15 minutes, shaking halfway through, until tender and slightly crispy.
Step 2: Make the Cheese Sauce
- In a saucepan over medium heat, melt butter and stir in heavy cream, cheddar cheese, Parmesan cheese, Dijon mustard, and paprika.
- Stir continuously until the sauce is smooth and creamy.
Step 3: Combine & Finish
- Transfer air-fried cauliflower into a mixing bowl.
- Pour the cheese sauce over and toss to coat.
- Sprinkle with pork rind crumbs or almond flour for extra crunch.
- Air fry for 2 more minutes at 375°F (190°C) to melt and crisp the top.
