Step 1: Prepare the Pastry
- In a saucepan, heat butter, lard, and hot water until melted.
- In a bowl, mix flour and salt, then pour in the hot liquid. Stir until combined.
- Knead the dough briefly, then cover and chill for 30 minutes.
Step 2: Make the Filling
- In a bowl, mix minced meat, salt, pepper, nutmeg, mace, onion powder, and stock.
- Stir until well combined and set aside.
Step 3: Assemble the Pies
- Roll out the pastry and cut into 4 circles (for the base) and 4 smaller circles (for the lids).
- Press the larger circles into small pie tins or ramekins.
- Fill each with the spiced meat mixture.
- Place the smaller pastry circles on top and crimp the edges.
- Brush with egg yolk for a golden finish.
Step 4: Air Fry the Pies
- Preheat the air fryer to 350°F (175°C) for 3–5 minutes.
- Place pies in the basket and cook for 18–22 minutes, until golden brown.
- Check for doneness, and let them rest for 5 minutes before serving.
Step 5: Serve & Enjoy
- Enjoy warm with brown sauce or mushy peas for an authentic Scottish experience!
