- Cook the Pasta:
- Cook the pasta according to the package directions. Once done, drain and toss with 1 tablespoon of olive oil to prevent sticking. Set aside.
- Char the Corn:
- Preheat your air fryer to 400°F (200°C).
- Toss the drained corn kernels with the remaining 1 tablespoon of olive oil.
- Spread the corn in a single layer in the air fryer basket. Air fry for 8-10 minutes, shaking the basket halfway through, until the corn is lightly charred. Set aside to cool.
- Cook the Turkey Bacon:
- Arrange the turkey bacon strips in the air fryer basket. Cook at 375°F (190°C) for 6-8 minutes or until crispy. Once done, remove and chop roughly. Set aside.
- Assemble the Salad:
- In a large bowl, combine the cooked pasta, charred corn, diced avocado, sliced green onions, chopped cilantro, diced jalapeño, chopped turkey bacon, crumbled feta cheese, and drained black beans.
- Prepare the Dressing:
- In a separate bowl, whisk together the mayonnaise, lime juice, ground cumin, paprika, chili powder, and hot sauce. Season with salt and pepper to taste.
- Combine and Serve:
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
