Instructions
- Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In a separate bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Slowly pour in the boiling water, mixing gently until the batter is smooth and thin.
- If using chocolate chips, fold them in now for added texture.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Chef’s Tips
- For an extra moist cake, wrap it in plastic wrap while it’s still warm and let it sit overnight.
- Feel free to experiment with different add-ins like nuts or dried fruit for added flavor and texture.
- Serve with a dusting of powdered sugar or a scoop of vanilla ice cream for an indulgent dessert.
