Instructions
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
- Once boiling, remove from heat and immediately stir in the flour until a dough forms.
- Allow the mixture to cool slightly, then add eggs one by one, mixing well after each addition until smooth.
- Stir in vanilla extract until well combined.
- Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
- Transfer the dough into a piping bag fitted with a star tip.
- Pipe rings onto parchment paper or directly into the hot oil, cutting the dough with scissors.
- Fry the crullers for about 2–3 minutes on each side, or until golden brown and crispy.
- Remove from oil and place on paper towels to drain excess oil.
- Dust generously with powdered sugar before serving.
Chef’s Tips
- Ensure the oil is hot enough before frying for a perfect texture.
- Experiment with flavored extracts, like almond or citrus, for a unique twist.
- For an extra touch, glaze the crullers with a simple sugar glaze instead of dusting with powdered sugar.
