Instructions

  1. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  2. Once boiling, remove from heat and immediately stir in the flour until a dough forms.
  3. Allow the mixture to cool slightly, then add eggs one by one, mixing well after each addition until smooth.
  4. Stir in vanilla extract until well combined.
  5. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  6. Transfer the dough into a piping bag fitted with a star tip.
  7. Pipe rings onto parchment paper or directly into the hot oil, cutting the dough with scissors.
  8. Fry the crullers for about 2–3 minutes on each side, or until golden brown and crispy.
  9. Remove from oil and place on paper towels to drain excess oil.
  10. Dust generously with powdered sugar before serving.

Chef’s Tips

  • Ensure the oil is hot enough before frying for a perfect texture.
  • Experiment with flavored extracts, like almond or citrus, for a unique twist.
  • For an extra touch, glaze the crullers with a simple sugar glaze instead of dusting with powdered sugar.
