Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish or line it with parchment paper.
- In a mixing bowl, combine graham cracker crumbs, ⅓ cup sugar, and melted butter. Mix until evenly combined and press it firmly into the bottom of the prepared baking dish to form a crust.
- In another bowl, beat the softened cream cheese and ¾ cup sugar until smooth and fluffy. Incorporate the eggs one at a time, mixing well after each addition.
- Add pumpkin puree, vanilla extract, pumpkin pie spice, and salt to the cream cheese mixture. Blend until fully combined and creamy.
- Pour half of the cheesecake batter over the crust, then drop spoonfuls of the remaining batter on top. Use a knife or toothpick to swirl the pumpkin batter into the cream cheese layer for a marbled effect.
- Bake in the preheated oven for 40-45 minutes, or until the center is set and a toothpick inserted comes out clean. The edges should be slightly golden.
- Remove from the oven and let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before cutting into bars.
