Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, ⅓ cup sugar, and melted butter. Mix until evenly combined and press it firmly into the bottom of the prepared baking dish to form a crust.
  3. In another bowl, beat the softened cream cheese and ¾ cup sugar until smooth and fluffy. Incorporate the eggs one at a time, mixing well after each addition.
  4. Add pumpkin puree, vanilla extract, pumpkin pie spice, and salt to the cream cheese mixture. Blend until fully combined and creamy.
  5. Pour half of the cheesecake batter over the crust, then drop spoonfuls of the remaining batter on top. Use a knife or toothpick to swirl the pumpkin batter into the cream cheese layer for a marbled effect.
  6. Bake in the preheated oven for 40-45 minutes, or until the center is set and a toothpick inserted comes out clean. The edges should be slightly golden.
  7. Remove from the oven and let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before cutting into bars.
