Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the thawed puff pastry sheet until it’s slightly larger than its original size.
  3. Cut the puff pastry into 12 equal squares or circles.
  4. In each piece of pastry, place a small piece of brie cheese in the center.
  5. Top the brie with a few blackberries and a teaspoon of blackberry jam.
  6. Fold the edges of the pastry over the filling, pinching to seal and create swirls or pockets.
  7. Brush the tops of each pastry swirl with the beaten egg to encourage a golden color when baked.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
  9. Remove from the oven and let cool slightly before drizzling with honey and garnishing with fresh thyme sprigs, if desired.
  10. Serve warm and enjoy these delicious pastries!

Chef’s Tips

  • For an extra layer of flavor, consider adding a sprinkle of sugar on top before baking.
  • Feel free to substitute blackberries with other berries like raspberries or blueberries for a different taste.
  • Experiment with different cheeses, such as goat cheese or cream cheese, for variety.
