Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the thawed puff pastry sheet until it’s slightly larger than its original size.
- Cut the puff pastry into 12 equal squares or circles.
- In each piece of pastry, place a small piece of brie cheese in the center.

- Fold the edges of the pastry over the filling, pinching to seal and create swirls or pockets.

- Remove from the oven and let cool slightly before drizzling with honey and garnishing with fresh thyme sprigs, if desired.
