Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the chopped spinach, ricotta cheese, cream cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well blended.
- On a floured surface, roll out the puff pastry sheets and cut them into squares (about 4×4 inches).
- Place a spoonful of the spinach mixture in the center of each pastry square.
- Fold the pastry over the filling to create a triangle, and pinch the edges to seal them tightly.
- Transfer the filled pastries to the baking sheet. Brush the tops with the beaten egg and sprinkle sesame seeds on top.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
- Once baked, let them cool slightly before serving. Enjoy with a dollop of sour cream if desired!
Chef’s Tips
- For added flavor, consider incorporating herbs like dill or chives into the filling.
- Make sure to thoroughly squeeze excess moisture from the spinach to prevent soggy pastries.
- These puffs can be made ahead of time and frozen before baking for a convenient appetizer option.
