Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until combined.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the buttermilk and gently mix until just combined. Do not overmix.
- Fold in the blueberries carefully to avoid breaking them up too much.
- Turn the dough out onto a floured surface and pat it into a rectangle about 1-inch thick.
- Cut the dough into circles using a biscuit cutter or a glass, and place them on the prepared baking sheet.
- Brush the tops with milk for a golden finish.
- Bake for 15-20 minutes, or until the biscuits are golden and cooked through.
- Allow to cool slightly on a wire rack before serving.
Chef’s Tips
- For extra flavor, add a teaspoon of vanilla extract to the buttermilk mixture.
- If using frozen blueberries, do not thaw them before adding to the dough.
- For a sweeter biscuit, consider sprinkling a little extra sugar on top before baking.
