Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour, whole wheat flour, salt, and the mixed seeds.
  3. Add the frothy yeast mixture and olive oil to the flour mixture. Stir until a rough dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Punch the dough down, then divide it into 4 equal pieces.
  7. Shape each piece into a round loaf and place into greased jars.
  8. Cover the jars with a cloth and let them rise again for about 30 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake the jars in the preheated oven for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped.
  11. Let the bread cool in the jars for 10 minutes before removing.
  12. Slice and enjoy your seeded bread warm!

Chef’s Tips

  • Experiment with different seed combinations for variety; flaxseeds or chia seeds can be great additions.
  • Ensure your water is not too hot to avoid killing the yeast.
  • For a crispy crust, place a small pan of water in the oven while baking to create steam.
