Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
- In another bowl, whisk together the eggs, milk, and olive oil until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix!
- Fold in the chopped spinach and shredded cheese into the batter gently.
- Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.
- If desired, sprinkle grated Parmesan cheese on top of each muffin.
- Bake for 20 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
- Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
