- In a skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the ground beef to the skillet, stirring to break it apart. Cook until browned.
- Stir in oregano, paprika, salt, and pepper. Cook for an additional 2-3 minutes until fragrant. Remove from heat.
- Meanwhile, in a bowl, mix the Greek yogurt, lemon juice, minced garlic, salt, and pepper until well combined. Set aside.
- Preheat your grill or pan over medium heat. Place a pita on the grill, sprinkle half with shredded cheese, and top with a portion of the beef mixture.
- Fold the pita over and cook for about 3-4 minutes on each side until golden brown and the cheese has melted.
- Remove from heat and repeat with the remaining pitas.
- Serve warm, drizzled with lemon garlic yogurt and garnished with chopped parsley.
