Instructions
- In a mixing bowl, combine Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix well until smooth and creamy.
- In a separate bowl, mash the raspberries using a fork, leaving some chunks for texture.
- Gently fold the mashed raspberries into the yogurt mixture, creating a marbled effect. Be careful not to overmix; you want to see swirls of the raspberry color.
- If desired, spoon in the almond or peanut butter and swirl it gently for an added protein boost.
- Using a spoon or ice cream scooper, fill a silicone mold or muffin tin with the yogurt mixture. Tap it gently on the counter to remove any air bubbles.
- Freeze the molds for at least 4 hours or until completely solid.
- Once frozen, pop the yogurt swirls out of the molds and serve immediately, or store them in an airtight container in the freezer for up to a month.
Chef’s Tips
- Use fresh raspberries for a burst of flavor, but frozen ones work great too and are available year-round.
- Feel free to experiment with other fruit purees such as strawberries or blueberries for variety.
- For added texture, mix in some granola before freezing for a crunchy surprise!
