Instructions

• Peel the banana and mash it in a large bowl until smooth.
• Stir in the beaten eggs until well combined.
• Add the self-raising flour and whisk until the batter is smooth.
• Lightly spray a nonstick frying pan with cooking spray and heat over medium heat.
• Spoon small portions of batter into the pan to form pancakes.
• Cook for about 1 minute, or until the bottom is golden and bubbles begin to appear.
• Carefully flip and cook for another 1–2 minutes until golden and cooked through.
• Repeat with the remaining batter.
• Divide the pancakes between serving plates.
• Top with mixed berries and a spoonful of Greek yogurt or fromage frais.
• Finish with a light sprinkle of ground cinnamon and serve immediately.
