- In a medium pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes until pink and opaque. Drain and let cool.
- In a large bowl, combine the diced avocados, chopped red onion, and fresh cilantro.
- In a smaller bowl, mix together the mayonnaise, lime juice, garlic powder, salt, and pepper to create the dressing.
- Once the shrimp are cooled, add them to the avocado mixture.
- Pour the dressing over the shrimp and avocado mixture, and gently toss to combine until everything is well-coated.
- Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
- Serve chilled, garnished with extra cilantro if desired.
