- In a mixing bowl, combine the cottage cheese, almond flour, cocoa powder, honey or maple syrup, chocolate protein powder, vanilla extract, and salt. Mix thoroughly until all ingredients are well combined.
- Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls.
- Place the balls onto a baking sheet lined with parchment paper and flatten them slightly.
- Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth.
- Drizzle the melted chocolate over the protein bites or dip each bite into the chocolate coating.
- Refrigerate the bites for at least 30 minutes to set the chocolate and firm them up.
- Store leftovers in an airtight container in the fridge for up to one week.

- For added texture, mix in some chopped nuts or seeds into the batter before rolling into bites.
