Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheets on a lightly floured surface and cut them into squares (about 4×4 inches).
  3. Place about a tablespoon of lemon curd in the center of each square.
  4. Fold the pastry over to form a triangle and seal the edges by pressing them together, then crimp with a fork.
  5. Brush the tops of the turnovers with the beaten egg for a golden finish.
  6. Bake in the preheated oven for 15-18 minutes or until golden brown and puffed up.
  7. Remove from the oven and let cool slightly before dusting with powdered sugar.
  8. Serve warm, garnished with lemon zest if desired.
