Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheets on a lightly floured surface and cut them into squares (about 4×4 inches).
- Place about a tablespoon of lemon curd in the center of each square.
- Fold the pastry over to form a triangle and seal the edges by pressing them together, then crimp with a fork.
- Brush the tops of the turnovers with the beaten egg for a golden finish.
- Bake in the preheated oven for 15-18 minutes or until golden brown and puffed up.
- Remove from the oven and let cool slightly before dusting with powdered sugar.
- Serve warm, garnished with lemon zest if desired.

- For a unique twist, add some fresh berries to the lemon curd filling for added flavor.
- Make sure to seal the edges well to prevent the filling from leaking out during baking.
