- In a large mixing bowl, combine the grated zucchinis with salt and let it sit for about 10 minutes to draw out excess moisture. Squeeze the zucchinis in a clean kitchen towel to remove any remaining liquid.
- In another bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper.
- Add the eggs to the dry mixture, and mix until well combined.
- Fold in the grated zucchinis, chopped green onions, and cheese (if using) until evenly distributed.
- Heat vegetable oil in a frying pan over medium heat. Use a spoon or small ice cream scoop to drop batter into the hot oil.
- Fry for about 3-4 minutes on each side, or until the fritters are golden brown and crispy. Remove them and let them drain on paper towels.
- Serve warm, and enjoy your Zucchini Clouds with your favorite dipping sauce!
