Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini with salt. Let it sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much liquid as possible.
  4. In a separate bowl, mix the squeezed zucchini, cottage cheese, breadcrumbs, Parmesan cheese, garlic powder, onion powder, pepper, and dried oregano until well combined.
  5. Using a spoon or your hands, form small patties of the mixture and place them on the lined baking sheet.
  6. Spray the tops of the patties with olive oil before baking.
