Instructions
- In a medium bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Mix well until smooth.
- Gently fold in the fresh blueberries, making sure to leave some whole for texture.
- Line a mini muffin tray or silicone mold with cupcake liners or spray with non-stick cooking spray.
- Using a spoon, scoop the yogurt mixture into each compartment, filling them about three-quarters full.
- Place in the freezer for at least 2 hours or until the yogurt bites are completely frozen.
- Once frozen, pop the yogurt bites out of the mold and store them in an airtight container in the freezer until ready to enjoy.
