Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix well to combine.
  4. In another bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the butter mixture, stirring until just combined.
  5. Fold in the finely chopped nuts until evenly distributed throughout the dough.
  6. Using a scoop or your hands, form the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.
  7. Bake in the preheated oven for 10-15 minutes, or until the bottoms are lightly golden but the tops remain pale.
  8. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes.
  9. While still warm, roll the cookies in powdered sugar until fully coated. Allow them to cool completely, then roll them again in powdered sugar before serving.

Chef’s Tips

  • Be sure to use room temperature butter for a smoother dough.
  • Experiment with different nuts, such as almonds or hazelnuts, for a unique flavor twist.
