- In a mixing bowl, combine the Greek yogurt, honey, protein powder, vanilla extract, and a pinch of salt. Stir until smooth and well combined.
- Gently fold in the fresh blueberries to the yogurt mixture, being careful not to crush them.
- Using a small cookie scoop or spoon, portion out the mixture onto a parchment-lined baking sheet. Form bite-sized balls.
- For an extra treat, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dunk each yogurt bite into the melted white chocolate, allowing excess chocolate to drip off. Place back on the parchment-lined sheet.
- Repeat until all bites are coated. If desired, you can sprinkle additional blueberries on top before the chocolate sets.
- Transfer the baking sheet to the freezer and let cool for at least 30 minutes until the bites are firm.
- Once set, enjoy immediately or store in an airtight container in the freezer for up to one month.
