Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the cottage cheese, flour, sugar, baking powder, and salt. Mix until smooth.
- Add the eggs and vanilla extract to the mixture, stirring until well incorporated.
- Gently fold in the blueberries, being careful not to crush them.
- Scoop 1/4 cup portions of the batter onto the prepared baking sheet, spacing them adequately apart.
- Brush the tops with melted butter for a golden finish.
- Bake for 20-25 minutes, or until they are golden brown and cooked through.
- Remove from the oven and allow to cool slightly before serving.
