- In a bowl, mix the peanut butter, sweetener, crushed pork rinds, and vanilla extract until combined.
- Line a baking tray with parchment paper and spread the peanut butter mixture evenly to about 1/2 inch thick. Freeze for 20 minutes.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Remove the peanut butter mixture from the freezer and cut it into bars of your desired size.
- Dip each bar into the melted chocolate, ensuring it’s completely coated. Place back onto the parchment paper.
- Refrigerate the bars until the chocolate sets, about 10 minutes. Serve chilled and enjoy!
