Instructions
- Preheat your oven to 400°F (200°C).
- Place the halved fingerling potatoes on a baking sheet. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper. Toss to coat evenly.
- Arrange the potatoes cut side up and bake in the preheated oven for 20 minutes.
- Remove the potatoes from the oven, sprinkle the cheese evenly over each potato, and place back in the oven.
- Bake for an additional 10-15 minutes, or until the cheese is melted and slightly golden.
- Garnish with fresh parsley before serving.
