Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the garlic until fragrant, about 1 minute.
- Add the spinach to the skillet and cook until wilted, then remove from heat and let it cool slightly.
- In a bowl, combine the softened cream cheese, cooked spinach, lemon zest, salt, and pepper.
- Cut a pocket into each salmon fillet and stuff with the spinach and cream cheese mixture.
- Season the outside of the salmon with salt and pepper.
- Place the stuffed salmon fillets in a baking dish and bake for 15 minutes or until the salmon is cooked through and flakes easily with a fork.
- Serve warm with lemon wedges on the side.
