Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté the garlic until fragrant, about 1 minute.
  3. Add the spinach to the skillet and cook until wilted, then remove from heat and let it cool slightly.
  4. In a bowl, combine the softened cream cheese, cooked spinach, lemon zest, salt, and pepper.
  5. Cut a pocket into each salmon fillet and stuff with the spinach and cream cheese mixture.
  6. Season the outside of the salmon with salt and pepper.
  7. Place the stuffed salmon fillets in a baking dish and bake for 15 minutes or until the salmon is cooked through and flakes easily with a fork.
  8. Serve warm with lemon wedges on the side.
