- In a medium-sized bowl, lightly mash 1 1/2 cups of raspberries with a fork, mixing in the fruit jam or preserves until well combined.
- In a separate, clean bowl, whip the heavy cream with the sugar and vanilla extract until soft peaks form.
- Prepare 4 serving glasses or dishes. Start layering with a spoonful of the mashed raspberry mixture at the bottom.
- Follow with a layer of whipped cream and then a few fresh raspberries.
- Repeat the layers until the glasses are filled, finishing with a layer of cream on top.
- Garnish each parfait with a whole raspberry and serve immediately.
